The Hinoki cutting board (small) from Shun is 10.75 x 8.25 inches and is about .5 inches thick. It is made of cypress which is a medium soft wood that helps preserve the edges of your Shun knives. To help maintain your cutting board, you should wet it before each use; this is to help resist staining. Also when it comes to cleaning your board you should use mild detergent; towel dry and let air dry away from direct sunlight. The cypress used to make these cutting boards are grown in Japan and are Forest Stewardship Council (FSC) Certified. All of their Hinoki boards are made from wood resulting from forest thinning, which is required to maintain healthy growth.
