Description

MIYABI Kaizen II 8-Inch Chef’s Knife

Versatile and razor-sharp, this 8-inch chef’s knife is your go-to tool for nearly any kitchen task—from chopping herbs and dicing onions to mincing garlic with confidence and precision.

The MIYABI Kaizen II collection—named after the Japanese word for “improvement” or “change for the better”—pushes the boundaries of knife craftsmanship. Each blade is meticulously handcrafted in Seki, Japan, a city with centuries of expertise in premium cutlery production. This series artfully blends time-honored Japanese techniques with modern innovations and stunning design.

At its core is FC61 super steel, known for its exceptional hardness and fine carbide distribution, ensuring a razor-sharp edge and lasting durability. The core is encased in 48 layers of beautiful damascus stainless steel, producing a dramatic, darkened flower pattern through a specialized acid-dipping process. The blade undergoes double FRIODUR ice hardening, boosting corrosion resistance and edge retention for long-term performance.

Every Kaizen II blade is hand-honed to a 9.5 to 12 edge using the traditional four-step Honbazuke method, resulting in an ultra-sharp, precision-cutting tool that feels like an extension of your hand.

Balancing the high-performance blade is an ergonomic, D-shaped handle made of sleek black pakkawood, providing a comfortable, stress-free grip. Accented with a decorative mosaic pin and finished with a polished end cap bearing the MIYABI logo, the handle is as refined as it is functional. An improved bolster adds balance and control, ensuring effortless cutting with every slice.
